White Chocolate Crème de Menthe Cookies

Here is a brand spanking new cookie recipe that I am sharing with you. This is a chewy inside, crisp outside cookie with a light minty refreshing taste. The green cookie with creamy white chocolate chips is an interesting contrast that compliments a holiday cookie platter well or stands on its own...and it is absolutely delicious, if you like a bit of mint.

This is one I made up myself so tell me what you think.

Ingredients
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup light brown sugar
1 egg
1/4 teaspoon peppermint extract
1-1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cream of tartar (for that crackled top)
green food coloring
1 cup white chocolate chips

Directions
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a medium bowl mix flour, salt, cream of tartar and baking soda.
3. In a another bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in egg and peppermint.
4. Mix in flour mixture.
5. Add green food coloring according to how colorful you want it and mix well.
6. Add white chocolate chips.
7. Make 1 inch drops onto cookie sheet lined with parchment paper.
8. Bake for about 10 minutes in the preheated oven, or until bottom just begins to brown.

Note: This made 48 cookies with a diameter of 2 inches for me. Also, I use food coloring paste so I do not have a set measured amount.
